This is one of those recipes that lives on repeat—for good reason. It’s quick, packed with flavor, and sneaks in a full serving of vegetables without sacrificing that juicy, savory feel. Whether you’re serving it with rice, folding it into tacos, or mixing it into pasta, this ground turkey delivers every time.
Ingredients
1 lb organic ground turkey
2 garlic cloves, minced
½ small onion, chopped
1 zucchini, finely chopped
1 small carrot, finely chopped
1 cup mushrooms of choice, chopped
1 tablespoon tomato paste
2–3 tablespoons water (divided)
1 tablespoon olive oil (plus more to finish)
Salt, pepper, oregano, paprika, and organic adobo, to taste
Fresh cilantro (optional)
Directions
Finely chop the mushrooms, zucchini, carrot, and onion.
In a medium pan, heat olive oil over medium heat. Add garlic and onion, and sauté for about 1 minute until fragrant.
Add the ground turkey and season right away with paprika, oregano, adobo, black pepper, and a small pinch of salt. Stir to coat and cook until the turkey begins to brown.
Add 3 tablespoons of water along with the chopped mushrooms, carrots, and zucchini. Cover and cook for about 7 minutes, or until the vegetables are soft and the water has mostly evaporated.
Uncover the pan, add another splash of water and the tomato paste. Stir well and cook for 2 more minutes. Add fresh cilantro if using.
Drizzle a touch of olive oil to finish if desired. Serve hot with rice, roasted veggies, pasta, or on its own.
